Lemon Zucchini Bread

INGREDIENTS
3 cups whole wheat flour
2 tbs ground flax seed
2 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tbs lemon zest
2 tsp lemon extract
2 tsp vanilla extract
½ cup apple sauce
⅔ cup maple syrup or more for sweeter
1 cup of grated zucchini with water squeezed out
1 cup of water or more if needed (you want a muffin batter consistency)
“Optional” Lemon Glaze:
½ cup powdered sugar
1 tsp lemon extract
1-2 tbs water
INSTRUCTIONS
1). Pre-heat oven to 375 degrees.
2). Mix dry ingredients in a bowl. Mix wet ingredients in a separate bowl and then mix with the dry ingredients. Stir gently to combine. Do not over mix.
3). Add batter to a silicon bread pan or to a lightly sprayed metal bread pan.
4). Bake for 30-35 minutes or until a knife inserted in the middle comes out clean. Once done, allow to cool before removing from pan.
Drizzle with optional glaze!
