Mushroom Bok Choy Ramen

INGREDIENTS
8 oz sliced shiitake mushrooms, or mushrooms of choice
3 bunches baby bok choy washed and chopped
4 cups sodium free vegetable broth or water
1 package ramen noodles (check out my Amazon store for my favorite)
2-4 tbsp vegan vegetable soup base (I like Orrington Farms Vegan Vegetable or Vegan Chicken soup base. Check out my Amazon store)
lime juice
cilantro
chili flakes
INSTRUCTIONS
1). Fill a pot with the vegetable broth or water and bring to a boil.
2). Once boiling, add mushrooms and ramen and boil until ramen is cooked, just a few minutes.
3). Turn off heat and add the baby bok choy and allow to wilt. Season to taste with powdered vegetable bouillon.
4). Serve topped with cilantro, lime, and chili flakes.
