Pumpkin Blender Pancakes

INGREDIENTS
1 ¼ cup rolled oats
¼ cup canned pumpkin puree
1 tsp vanilla
½ tsp cinnamon or pumpkin pie spice
½ tsp baking powder
⅛ tsp salt
¾ cup water
INSTRUCTIONS
1). Heat a nonstick griddle on medium high heat.
2). Place all the ingredients in a blender and blend until smooth, then pour batter onto the griddle. Do not make the pancakes too big or they will not cook in the middle. You can use a ¼ cup measuring cup to scoop out the batter.
3). After the batter is poured, use a spoon to spread them out thinner so they cook all the way through.
4). Cook for 4-5 minutes, then flip and cook for another 4-5 minutes.
5). Top with mashed banana or 2 tbsp maple syrup.
NOTES
*Nutrition Information is for the entire recipe including 2 tbsp maple syrup but not banana.

I just made this for my 6 yo and he gobbled it down. I put some maple syrup and blueberries on top and served it with orange juice. Yummy!
These pancakes are delicious. I added one large egg and they came out even better and fluffier.
First time making these but won’t be my last. #yumminess!
