Sweet Potato and Curry Roasted Chickpeas

INGREDIENTS
1 medium sweet potato (300g) baked
½ cup curry roasted chickpeas
4 tbsp vegan caesar dressing
1 cup arugula
INSTRUCTIONS
1). Preheat the oven to 425 and roast your sweet potato for 40-50 minutes or until you can easily pierce it with a knife.
2). Once the sweet potato is done, top each half with a ¼ cup of the curry roasted chickpeas, arugula, and caesar dressing.
