Blueberry Pancakes

INGREDIENTS
2 ½ cups whole wheat flour
4 tbsp coconut sugar (or other type of sugar)
4 tsp baking powder
1 tsp salt
½ cup applesauce unsweetened
2 ½ cups water
2 tsp vanilla extract
1 cup frozen or fresh blueberries
INSTRUCTIONS
1). Mix the dry ingredients in a bowl then add the wet ingredients.
2). Heat a nonstick pan to medium high heat. If your pan sticks, you might need to lightly spray it before cooking pancakes on it.
3). Pour batter onto pan then place blueberries on top of the batter.
4). Cook for 2-3 minutes or until starting to brown then flip and cook an additional minute or two.

My whole family loved these. I made them with fresh ground wheat with my wheat grinder and they were light and fluffy. I didn’t have blueberries so I ended up using a frozen berry blend. Yummy. Thank you so much for your great recipes : )
