Vegan Baked Beans

INGREDIENTS
3 cups dry pinto beans
8 cups of water
1 medium sweet onion diced
1 tbsp garlic powder
1 tsp onion powder
1 tbsp smoked paprika
2 medium sized jalapenos, deseeded and minced
¾ cup ketchup
4-6 tbsp maple syrup (or to taste)
1 tbsp lemon juice
1 tsp salt (or more to taste)
Pepper to taste
INSTRUCTIONS
1). Soak beans for 10 hrs, I like to soak them in the morning then cook my beans overnight in the crock pot so they are ready the next day.
2). Once they are done soaking then drain and rinse thoroughly and place into a large crock pot with 8 cups of water.
3). Add onion, jalapeno, garlic, and smoked paprika to the crock pot. Cook on high for 12 hours. You can add another cup of hot water a few hours before it’s done cooking if you like runnier baked beans.
4). Once done, add the ketchup, lemon juice, maple syrup, salt and pepper to taste. Enjoy with some Vegan Hot Dogs, and Vegan Potato Salad and Coleslaw!
