INGREDIENTS
1 cup raw cashews soaked
½ tsp garlic powder
¼ tsp onion powder
½ tsp salt (or more to taste)
2 tsp lemon juice
1 tsp dried parsley flakes
1 tsp dried chives
¼ cup water
INSTRUCTIONS
1). Place cashews in a bowl and cover with cold water and allow to soak overnight or for a quick soak, pour boiling water over cashews and allow it to sit for 4 hrs.
2). Drain and rinse the cashews once they’ve soaked, and place into a small blender attachment. Add all the ingredients except for the parsley and chives.
3). Blend until smooth and creamy, then mix in the parsley and chives and mix with a spoon until incorporated.
Keeps in the refrigerator for 5 days.

I LOVE THIS! I feel like it’s an herb ricotta. I’ve been adding it to sandwiches and to salads and my husband loves it too!
So easy and soooo delicious! My whole family loves this. Usually one child likes something and the other doesn’t so this one is a huge win for us! I don’t have dried chives so didn’t use it but it turned out great! Describing it as a “Herbed Cream Cheese” is spot on!
