Broccoli Cheese Casserole

INGREDIENTS
6 cups cooked rice (800 g)
1 recipe Vegan Cheese Sauce
5 cups broccoli, steamed and chopped (500 g)
½ cup gluten free bread crumbs or normal bread crumbs
⅛ tsp garlic powder, optional
Salt and pepper to taste
INSTRUCTIONS
1). Preheat the oven to 425.
2). In a large bowl add the cooked rice, steamed and chopped broccoli, and the Vegan Cheese Sauce. Stir to mix well then transfer to an 8×11 casserole dish.
3). Top with the ½ cup of breadcrumbs then season the bread crumbs with garlic powder and salt and pepper. (you may lightly spray the bread crumbs with avocado oil to help it brown or if you are transitioning yourself or your family from cooking with oil.)
4). Bake in the oven for 20 minutes or until the crumbs are golden brown. If you are using hot rice, broccoli, and cheese sauce then just broil the casserole for a few minutes, watching it closely so the bread crumbs don’t burn, to brown the top quickly.

*Nutrition Information is for 1/8th of the recipe or 1 cup, made with the normal Vegan Cheese Sauce recipe…not the fat free version.

I love this recipe. So easy and no thought in what to pare it with. It would be a great video idea for you to make all 50/50 casseroles. Thank you for all you do.
I made this today to finish the cheese sauce from the fridge. I added some beans and mushrooms that needed to go. I paired it with roasted pumpkin and brussel sprouts. It was delicious! My mom is not vegan but ate a full bowl ?.
This recipe is the best! Never would I have imagined it would be flavorful and satisfying. It’s also fulfills the 50/50 plate which is great. We added some field roast sausage to ours last time and it was fabulous! Soooo good! Thank you!
