Chili Lime Roasted Corn

INGREDIENTS
6 corn on the cob
1 lime
½ cup chopped cilantro
1 tsp chili powder
Garlic salt to taste
INSTRUCTIONS
1). Shuck the ears of corn and boil for 3 minutes. Strain and allow them to cool enough to handle.
2). Once cooled, heat the grill on high and grill the corn for a few minutes on each side, just enough to brown them but not dry them out.
3). Once they are done squeeze lime on them and sprinkle with garlic salt and chili powder.
4). Then top with cilantro and enjoy! Try this with some Vegan Potato Salad, Baked Beans, or Coleslaw!
