Eggless “Egg” Salad

INGREDIENTS
1- 15 oz can chickpeas, drained and rinsed
2 tbsp yellow mustard
3 tbsp Vegan Ranch dressing
¼ tsp salt or to taste
Pepper to taste
INSTRUCTIONS
1). Drain and rinse the chickpeas and place in a bowl.
2). Using a fork or your hands, mash the chickpeas still leaving a somewhat chunky texture.
3). Add the rest of the ingredients and mix well. Goes great on a salad or in a sandwich for an easy lunch or picnic. Try my “Egg” Salad Sammy!
