INGREDIENTS
Low fat or oil free marinara, jarred or homemade
Pineapple, fresh or canned
Veggies you enjoy
Yummiest Vegan Cheese sauce
Dough:
3 ½ cups whole wheat flour
3 tsp rapid rise yeast
2 tsp garlic powder
¼ tsp salt
½ cup apple sauce
1- 1 ¼ cups warm water
Cornmeal
INSTRUCTIONS
1). Preheat the oven to 425. On a parchment lined baking sheet place mushrooms, onions, bell pepper and broccoli. Season with garlic salt and roast for 25 minutes.
2). In a mixing bowl add dry ingredients for pizza dough.
3). Then add applesauce and turn on the mixer to low, then slowly pour water in. You may not need all the water, you want the dough to come together and not be too sticky.
4). Once dough is formed then add dough hook attachment and knead for 5-10 minutes. If you don’t have a mixer that can knead dough then just knead dough by hand for 5 minutes.
5). Form into a ball and let dough sit, covered in a mixing bowl for 20-30 minutes. It is then ready to use.
6). Take veggies out of the oven and allow to cool slightly.
7). Roll out dough on a floured surface and place on a pizza stone or baking sheet that has been sprinkled with cornmeal so it doesn’t stick.
8). Pre-bake crust for 10 minutes then take out and top with sauce and veggies, pineapple and olives.
9). Bake for 25 minutes then take out and top with hot cheese sauce and enjoy. Remember to fill half your plate with veggies and always eat your veggies first.
NOTES
Pro Mommy Tip
Get your kids involved in pizza night! Have them help make their own little pizzas and put all the finely diced veggies in front of them to choose from to try. Some kiddos will refuse to try any, my youngest was like this for a long time….So I let her have just sauce, cheese sauce, and pineapple, but then required her to eat a veggie of her choosing on the side.
