Vanilla Pumpkin Spice Waffles

INGREDIENTS
2 ½ cups rolled oats
½ cup pumpkin puree
2 ripe bananas
2 tbsp ground flaxseed or vegan powdered egg replacer
2 tsp vanilla extract
1 tsp pumpkin pie spice
1.5 cups water
INSTRUCTIONS
1). Heat your waffle iron.
2). Place all ingredients in a high speed blender and blend until smooth.
3). Once waffle iron is ready, lightly spray with oil if your iron sticks, and pour batter into iron.
4). Put the waffle iron lid down and allow the waffles to cook for 5-8 minutes. They are done when they are no longer sticking to the iron.

I’ve made these twice, they are so good! Do you think I could just use oat flour instead of the whole oats and would the measurements be the same? Thanks!
The mini waffle iron I have is useless, even with it sprayed with oil, the waffles still stuck. Instead, I made a stack of pancakes using this recipe, topped them with thawed sliced strawberries & pineapple & their juices. The pancakes were very good, but it was too time consuming to cook them one at a time in a small nonstick skillet. I’ll stick to steel cut oats with fruit for breakfast.
