Ingredients:

  • 2 ½ cups rolled oats
  • ½ cup pumpkin puree
  • 2 ripe bananas
  • 2 tbsp ground flaxseed or vegan powdered egg replacer
  • 2 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1.5 cups water

Instructions:

Heat your waffle iron.

Place all ingredients in a high speed blender and blend until smooth. 

Once waffle iron is ready, lightly spray with oil if your iron sticks, and pour batter into iron.  Put the waffle iron lid down and allow the waffles to cook for 5-8 minutes.  They are done when they are no longer sticking to the iron.

Servings:

Makes 10-12 waffles.

    No waffle iron here. I bet these could be pancakes too.
