Vegan “Chicken” Salad

INGREDIENTS
1- 15 oz can chickpeas, drained and rinsed
2 tbsp onion, finely minced
2 tbsp celery finely minced
5 tbsp Vegan Ranch
INSTRUCTIONS
1). After you have drained and rinsed the chickpeas, add them to a bowl and gently mash them with a fork, masher, or your hands. You still want it to have some texture but make sure there are no whole chickpeas left.
2). Then add the onions, celery, ranch, and mix well.
3). Then season to taste with salt and pepper. This vegan “chicken” salad goes really well over greens or in a yummy Vegan “Chicken” Salad Sandwich.
