Vegan Hot Dogs

INGREDIENTS
8 carrots peeled and cut to bun length
⅓ cup apple cider vinegar
⅓ cup water
⅓ cup low sodium soy sauce
1 tsp onion powder
1 tsp garlic powder
½ tsp paprika
2 ½ tbsp maple syrup
1 ½ tbsp liquid smoke
*I also like to add 3 tbsp jalapeno juice from a small can of pickled Jalapenos (optional)
Canned oil free chili
Cheese sauce
Whole wheat hot dog buns or gluten free buns ( I also like lettuce wraps)
INSTRUCTIONS
1). Mix the vinegar, water, soy sauce, onion/ garlic powder, paprika, maple syrup, and liquid smoke in a dish or plastic bag.
2). Boil carrots until fork tender, then place in a bag or dish with marinade and allow to marinate overnight.
3). When ready to use, grill for a few minutes, being careful not to dry out the carrots.
4). Enjoy on whole wheat hot dog buns with the topping you enjoy.
