Lentil Loaf

INGREDIENTS
2 cans brown lentils (drained and rinsed)
2 cans black lentils (drained and rinsed, or use all brown lentils)
2 cups bread crumbs (regular or gluten free)
1 cup corn
1 cup diced onion
1 cup chopped cilantro
½ cup chopped jalapeno without the seeds unless you like it spicy
2 tbsp ground flaxseed
1 cup sweet BBQ sauce
INSTRUCTIONS
1). Preheat the oven to 350.
2). Mix all ingredients together in a bowl and place into a 9 x 13 baking dish.
3). Bake for 40 minutes.
4). You can top with extra BBQ sauce and bake for the remaining 5 minutes. This pairs well with mashed potatoes.

Wondering how many “cups” are in your “can”? I cook my own lentils, thank you!
I use a 15oz can but don’t know how many cups that is. The can says 3.5 – 1/2 cup servings, but I am not sure if that includes the liquid in the can.
I just made this tonight with jarred jalapeños (lazy), & ketchup instead of BBQ sauce. It’s so yummy!! I’ve been vegan for 3 years and have made a million kinds of lentil loaves, but this one is much easier & just as tasty as other more labor intensive ones! Thank you!!
I have never seen lentils in a can…interesting! I also use bagged lentils. I guess I will play with the amount. looking forward to making this.

This looks delicious! Is the BBQ sauce your own recipe? I can’t seem to find it. Or is there a commercial bbq sauce without sugar and oil?
I made this tonite and it was delicious! I just added some S&P and garlic powder!! Made a lot for one person so next time I will halve the recipe!!
I used 3 cans of brown lentils and it filled my 9×13” loaf pan full?? What could be wrong?
Made this for supper tonight, it is so good. It makes a lot so I divided the mixture between to 8×4 meatloaf pans, one for tonight and the other for the freezer, and they turned out beautifully.
I buy canned lentils at Walmart super center!
