1 cup powdered peanut butter
1-2 tbsp low sodium soy sauce
1 tbsp rice vinegar
1-2 tbsp maple syrup
2 tbsp lime juice
½ tsp coconut extract (optional)
pinch of ginger, fresh or powdered
INSTRUCTIONS
1). Prepare peanut butter according to package directions then mix in the remaining ingredients. Enjoy as a dressing for salad, or over vegetables and rice.
