- 1 cup powdered peanut butter
- 1-2 tbsp low sodium soy sauce
- 1 tbsp rice vinegar
- 1-2 tbsp maple syrup
- 2 tbsp lime juice
- ½ tsp coconut extract (optional)
- pinch of ginger, fresh or powdered
Prepare peanut butter according to package directions then mix in the remaining ingredients. Enjoy as a dressing for salad, or over vegetables and rice.
Makes 1 Serving.
