INGREDIENTS
2 cups cooked rice
1 cup Cheese sauce
½ cup canned corn
½ cup beans (canned or homemade)
¼ cup cilantro optional
½ lime squeezed
Garlic salt to taste
1 avocado (optional)
16-18 corn tortillas
Cashew sour cream
INSTRUCTIONS
1). Preheat the oven or air fryer to 425.
2). In a bowl mix the rice, corn, beans, cilantro, lime, cheese sauce, and garlic salt to taste.
3). Slice the avocado into thin slices if using.
4). Lay out a few corn tortillas at a time (if you heat the tortillas up in the microwave first and roll them while they are warm, they won’t split and break.)
5). Add a slice of avocado if using, then add a spoonful or two of the mixture and roll the taquito up and place it seam side down on a parchment lined baking sheet or in the basket of your air fryer. You may give them a light spray of oil to help them brown (optional), then bake or air fry for 15 minutes or until crispy.
6). Garnish with cheese sauce and cashew sour cream.
For older kiddos, try adding some mild salsa to the cheese sauce for a “queso” style dip.
NOTES
Pro Mommy Tip:
Sometimes kiddos don’t like when their food is garnished for them, but they do seem to love having dipping options! So try serving these with 2 little dishes of cheese sauce and cashew sour cream so they can choose which dip they like if any.

Based on your idea …. I stuffed my taquitos with leftover mashed potatoes mixed with peas. They were so good dipped in your cheese sauce. My non vegan husband asks for these! ?
