Vegan Lemon Berry Custard

INGREDIENTS
1 package 365 Instant Vanilla Pudding (vegan)
2 cups almond milk unsweetened
1 cup sliced strawberries
1 cup black berries
¼ tsp lemon extract
Pinch of lemon zest (optional)
INSTRUCTIONS
1). Make pudding according to package directions and place in the fridge to set up.
2). Slice strawberries and add them and the black berries to a bowl.
3). For a single serving take a ¼ cup of the set up pudding and mix in the ¼ tsp lemon extract.
4). Layer the lemon pudding over the bowl of berries and top with lemon zest. The whole batch of pudding can be made into 8 servings of lemon custard, or use the leftover pudding to make Peanut Butter Banana Silk Pie .
