Weight Loss Friendly Broccoli Cheddar Soup

INGREDIENTS
3 cups yukon gold potatoes (diced)
½ cup carrots sliced
1 tsp onion powder
2 tsp garlic powder
2 tsp salt
4 tbsp nutritional yeast (optional, this adds cheesy flavor) (affiliate link)
2 cups water
2 cups broccoli steamed
2 tsp lemon juice (juice of ¼ lemon)
½ cup cashews (optional for a creamier cheesier soup)
INSTRUCTIONS
1). Fill a medium pot with water and add the potatoes, and carrots. Boil until soft.
2). While the potatoes and carrots cook, steam the broccoli and then chop and set aside. Place the rest of the ingredients in a high speed blender.
3). Once the carrots and potatoes are done, drain off the water but KEEP the water to add to the mixture.
4). Place the carrots and potatoes into the blender with the other ingredients and add 2 cups of water. Blend until smooth. You can add more water if you want a less thick soup.
5). Stir in the broccoli and you can enjoy this vegan broccoli cheddar soup guilt free!
