• 4 tbsp dijon mustard
  • 4 tbsp maple syrup
  • 2 tsp lime juice 
  • ½ tsp yellow curry powder (more or less depending on how strong of a flavor you like)
  • 1 tbsp cilantro chopped


Combine all ingredients together in a small container with a lid.  Add the lid and shake to mix well.  Will keep in the refrigerator for 1 week. *Enjoy on the Mango Chickpea and Curry Salad


Makes 3-4 servings.

    This was INSANELY delicious! I gobbled up my salad like it was a plate full of candy. Turned around and made a 2nd one to pack for work the next day. My one and only drawback was the maple syrup. The label on the bottle I bought said that there was 24g of sugar in 2 tablespoons. The dressing calls for 4 tablespoons and I used half the batch so I was eating at least 2 tablespoons of the syrup. 25 grams of sugar is my suggested daily allowance. I wish I didn’t hit it just from eating a salad. Maybe next time I’ll look for sugar free maple syrup if there is such a thing. But my gosh it was delicious!

    This dressing is PHENOMENAL!!! It is my favorite homemade dressing. And I tried the salad recipe as well. Kiki…girl…you hit this out the park for me!     Yum, what a unique and delicious dressing! Thank you, Kiki! Your recipes here and content on Youtube have really gotten me excited again about WFPB eating, and also helped me release a lot of my judgment around carbs and needing to eat ‘perfectly.’

    I made this with red curry paste (all I had on hand), spicy brown mustard, and only half the maple syrup–I subbed the rest with water + 2 drops of stevia. Elana, Melanie, and others, that might be something to try if you’d prefer less sugar! I still found the dressing sweet and delicious.
