• 6 cups spring greens
  • ½ cup canned chickpeas drained and rinsed
  • 1 cup cooked potatoes
  • ¼ cup red onion
  • ½ cup mango chopped
  • ¼ cup cilantro chopped
  • ½ cup cucumber sliced
  • Cilantro Curry Dressing


Combine all ingredients in a large bowl and add dressing, toss to coat.


Makes 2 servings.

    We made this tonight and it was amazing. We threw in half the dressing and served the rest on the side.. There is a lot of sauce for our palate (we are British and used to salad without dressing!!) Really delicious and winner winner We have it for lunch tomorrow. Highly recommend.
