Vegan Lemon Berry Custard

Instructions:

Make pudding according to package directions and place in the fridge to set up.  Slice strawberries and add them and the black berries to a bowl. For a single serving take a ¼ cup of the set up pudding and mix in the ¼ tsp lemon extract.  Layer the lemon pudding over the bowl of berries and top with lemon zest. The whole batch of pudding can be made into 8 servings of lemon custard, or use the leftover pudding to make Peanut Butter Banana Silk Pie.

 

*1- ¼ cup serving of pudding with 2 cups of berries is about 159 calories.

    What size was the box of pudding you used? My pudding never set firm.
